Old favourites

It was my turn last week to set the Violet’s pantry challenge and it was quite a job to know what to choose so I went with my trusted old favourites, the ones that I make again and again. One of them was this chicken recipe, that I ripped out of the Listener a few years ago. It is by Lois Daish, who used to be the food columnist for the Listener. I used to look forward to her column every week and I really enjoy her style of cooking. This recipe has taken quite a bit of fiddling with to get right, I found the original recipe produced too much liquid and have since taken to pouring the liquid off about 3/4 of the way through cooking to get the potatoes and chicken crispier. The dish is finished with gremolata- parsley, garlic and lemon zest- it is this little flourish that makes this dish really delicious. This is a homely favourite that my kids really enjoy, and is the kind of meal that is able to be contracted or expanded depending on how many are eating, as it is a very quick and easy dish to prepare and cook. I served this with steamed broccoli and carrots.

iLASIK Information

I have been blessed with good genes when it comes to my vision. Both my parents wore reading eyeglasses when they were already in their fifties. Up to now, my Mother who is 67 years old, wears reading glasses only. Among my seven siblings only one of them wears glasses. Hopefully, with proper diet and care of my eyes, I will inherit the trait from my parents.

However, for my husband it is the opposite. As long as he can remember, his parents have been wearing glasses. He also has pair of eyeglasses which he seldom wears. Lately, my second child has been showing signs of visual impairments already. She often misreads and mispronounces words and thereby affecting her comprehension. Most of the time, there are more incorrect words that she reads than the correct ones. This worries me big time since this will consequently affect her academic performance. That is something that we should not compromise. Thus when I came across this LASIK information and how beneficial this is even to NASA personnel under extreme physical situations, I started to get interested.
LASIK technology is becoming known to many now as it brings about better vision for many people. Have you tried it?

Vijender could not be the alchemist and turn his bronze into gold but on Friday’s semifinal defeat could not deny him the honour of being India’s first Olympic medal winning boxer.Cuban Emilio Correa Bayeaux simply outsmarted the Indian 8-5 to win the 75kg category semifinal in a comprehensive manner and the outcome meant Vijender had to be content with the bronze, which he was already assured of.

The Cuban negated Vijender’s height and reach advantages by playing from a distance. He simply did not allow Vijender land a single blow in the first, third and fourth rounds.Even two penalty points in the final round could not make any difference for the Cuban had tilted the game in his favour a long away.Surprisingly, barring the second round, Vijender held himself back throughout the bout and mostly sprayed his punches.

Know your eyes better

I live my life in a way that forces me to always try to be better than I was the day before. A better dad, better husband, better boss and a better person in general. Over the course of the day and in the evening, or just driving in the car I do a lot of personal self-reflection. I run through the events of the day and wonder if I could have handled certain situations differently. If they would have had a better outcome had I done X rather than it.This isn’t an exercise in self-doubt, just self-evaluation. The goal is to always be learning from both my mistakes and my successes. One of the things I think is necessary for any person to truly succeed in life is that they must know their reason for being. Like every buisness should have a UVP (Unique Value Proposition), every person must have what I call a PUPIL, a Personal Unique Purpose In Life.

The pupil of the eye is what allows us to see. If our pupils become damaged we become blind and no longer able to see the world around us. We can still function, but in a different capacity. Similarly, if you don’t know your Personal Unique Purpose In Life, you’ll still be a functional member of society but you’ll never see your full potential realized.Knowing your purpose can help  you stay focused. Too often situations come up that make us want to just quit. And some people do. They quit their jobs, their marriages, their families, their friends, their employees and even their lives. But knowing your PUPIL helps you get through those rough times. It’s being able to see the forest for the trees.

Favorite Great American Seafood Recipe

Cooking has always been one of my specialties. I love to experiment with new ideas around the world. Not too extravagant, just something simple like stealing candy from a baby. One of my personal favourite cuisines are seafood. Thankfully, I’m not allergic to them so I can savour every bite without any hesitations. Just recently, there is a recipe contest in America where few of the top chefs in the state compete to see who would come up on top via online votings. The menu which really impressed me was Shrimp and Andouille Cassoulet by Chef Brian Landry from Louisiana. Although I did not understand half of what is in the menu, the caption stated that it is made up of Louisiana Shrimp and Andouille sausage smothered in a white bean casserole. That sounds really appetizing.

They even published the whole recipe step by step. Obviously I’m not going to list each and every bit down but more information can be found on www.GreatAmericanSeafoodCookOff.com. This is where I first heard of cook off contest between five of the best chefs in the country. I personally love prawns and shrimps. For one reason, it saves me time from peeling those annoying hard crustacean shells unlike crabs and lobsters. Basically, Shrimp and Andouille Cassoulet is very easy to prepare. The ingredients are all listed out and all you need to do is to follow the instructions.There’s no way you can go wrong. Here, Brian actually used sausages as one of the main ingredients but I believe anything that goes well with shrimps is worth a try such as bacon or even salad. For me, the most important ingredient in a main dish has to be the seasonings. Without proper seasonings, the menu would not taste as good even with expensive meat. Seafood has to be served best when it’s fresh. Normally back in my country, fishermen would go out to sea at dawn and come back in the early hours to sell them to fishmongers. Thinking of those fat, juicy shrimps makes me wanna scoop them up from woolies cold storage and let them slide down my throat not raw of course.

Are you Normal or Nuts?

Are you some kind of a person who is shy? Or let me ask you a question like this, Are You Normal or Nuts? Which personality that fits you? I myself can’t answer this question. Until I found this website and I found their article about Are You Normal or Nuts? After reading, it makes me think if I am normal or nuts but I know now where my personality characteristic belongs. Sounds interesting huh?! I guess you better find out yours too and tell me about it.

One article their about afraid of high places, like tall bridges or even the balcony at church. If I relate this in life, life is unpredictable you know. If we don’t try, we can’t learn our lesson. So why not face the truth, if you fall then stand back and correct it? For example a child wants to learn how to ride the bicycle, if she won’t try, she can’t learn. Well then, just keep on trying until you succeed in life and don’t be afraid.

They are back!!!

How often have you heard of this, especially on blogs, only to see that the “real soon” becomes “really, really later”. I was reminded of this from a post on one of my feeds, where a blogpost went “dont give up on this blog yet, we’re gonna re-ingnite soon” somewhere last August. And the next post? This Jan, well into it, in fact.

Not that I’m not guilty of it either. There have been times when I’ve seen the blog and gone “Oh Shit! I need to update it. But what do I write?” (What do I write, indeed!) and then said “I’ll be back soon”. Case in point? WP blog of the same name(link), where I cant blog, cos access to WP is severly limited, and it doesnt have email blogging enabled (very, very silly thing, in my opinion). Blogger does. Voila! I’m posting more and more on here! :)

That digression aside, what do you do when you’re thinking of posting “I’ll be back soon”? Dont post it. Post something interesting. Even if just a link to a newspaper.
